Celebrating pride month!



Rainbow Cake Recipe

As a celebration of pride month; have a go at creating a Rainbow cake! Please make sure you send pictures of your attempts to your personal tutor!

Cake Ingredients

360g self-raising flour  
360g butter (softened)  
360g caster sugar  
40ml milk  
6 medium eggs  
4tsp vanilla extract  
Food colourings; red, orange, yellow, green, blue and violet  
Icing Ingredients
200g butter (softened)  
220g full-fat cream cheese  
700g icing sugar, sieved  


Baking tools

3x 20cm cake tins  
Greaseproof paper  
3 Mixing bowls   
Whisk or electric whisk   
Scales  
Measuring jug  
Cooling rack   
Sieve   
Teaspoon  


Method

1. Heat oven to 180C/160C fan/gas mark 4.  
2. Grease 3x cake tins and line with greaseproof paper.  
3. In a large bowl but 180g of softened butter, 180g of caster sugar, 180g flour, 3 eggs, 2tsp vanilla extract and 20ml milk. Mix with whisk/electric whisk until light and creamy.               
4. Divide mixture equally between 3 bowls.  
5. Add red food colouring to a bowl until a good shade, mix well. Do the same with orange food colouring to another bowl. Repeat with yellow food colouring to the 3rd bowl.    
6. Transfer food mixture to greased cake tins.  
7. Bake for 12-15 or until firm to touch and a skewer comes out clean.  
8. Leave to cool on a wire rack.   
9. Repeat steps 2, 3 and 4.
10. Add green food colouring to a bowl until a good shade, mix well. Do the same with blue food colouring to another bowl. Repeat with violet food colouring to the 3rd bowl.    
11.Repeat steps 6, 7 and 8.
12.Once all cakes are cooled prepare icing- Place 200g softened butter and 220g cream cheese in a bowl and mix until smooth.     
13. Add icing sugar and mix until smooth.  
14. Use icing on the top of the violet cake and then put blue cake on top.
15. Use icing on the top of the blue cake and then put green cake on top.
16. Use icing on the top of the green cake and then put yellow cake on top.
17. Use icing on the top of the yellow cake and then put orange cake on top.
18. Use icing on the top of the orange cake and then put red cake on top.
19. Use the rest of the icing to put on top and on sides of the cake.
20. Chill cake in fridge until firm.

Likes: Reading, computer games, spending time with my daughter and pizza!
